Drop the pancakes with a big spoon. I make these smaller than your normal run-of-the-mill pancakes, because they’re pretty delicate until they’re fully cooked, so keeping them small helps keep the mess to a minimum. And I totally hate messes. Leave them alone for 3-ish minutes, and flip them. Do just like you do with normal pancakes – wait until you see the edges start to brown and little bubbles surface around the edges.
