World’s Easiest No-BS Pancakes


I make these pancakes every single Sunday. Not that we couldn’t eat them every day (there’s no sugar added and nothing bad in them, whatsoever), but I just don’t have the time. I do have a day job (or three). But on glorious Sundays, my sweet husband likes to watch the babe while I prepare our favorite meal of the week – a big ol’ stack of no-bs pancakes. No sugar, no gluten, no nothin.

These healthy pancakes have spinach in them. YES. Spinach. And no added sugar. No added crap. Good enough to eat every day of the week.

When my husband and I eat them, we add maple syrup, because duh, pancakes. But the little man is more than happy to eat them exactly as they are. You can do anything with these – add fruit, chocolate chips, whatever. Make them yours!


What You Need

  • Two Bananas. Ripe or even overripe, but don’t you dare use underripe green bananas. Don’t you dare.
  • Two eggs.
  • 1 tsp. vanilla
  • One Handful of Fresh Spinach.
  • That’s it. Really
